Strawberry Banana Smoothie Bowl
And I’m baaaaacccckkkkkkkkkk!!! As amazing as a vacation is, it’s always nice to be back home and sleep in your own bed and cook in your own kitchen. But vacation was amazing! I loved and enjoyed every minute of it. When we arrived we had so many plans and were so ambitious, we were going to go on so many excursions and check out the city.
We did none of those, we ended up on the beach every day soaking up all the sunshine we could get…..and of course having cocktails. I didn’t have too many frozen drinks, because those are always so full of sugar, instead I opted for pineapple juice with rum, not Paleo, but not bad considering we were on vacation. I feel like life cannot be about restricting yourself, otherwise it will not be fun.
The food selection was amazing! There were so many choices it was easy to eat Paleo. I think my favorite meal was on the last night we were there, they were having a Dominican night in the main buffet and everything I had was so good. Dominican cuisine uses a lot of plantains as opposed to wheat, so it’s naturally Paleo friendly. I did get to a point where I missed cooking and making my own food. As good as the food selection was, you cannot beat going into your own kitchen and cooking anything your heart desires.
I missed smoothies so much while I was away, I made myself a smoothie bowl as my first meal back. Smoothie bowls are more filling than smoothie because if the topping. Grab a spoon and dig right in!!

Add the almond milk, banana, strawberries, chia seeds and vanilla extract to a high speed blender.
Blend until the smoothie reaches the desired consistency.
Pour into a bowl and serve with chopped bananas, shredded coconut, chopped nuts and chia seeds.
Serve immediately and enjoy!
- 1 cup almond milk, unsweetened
- 1 large frozen banana
- ¾ cup frozen strawberries
- ½ tbsp chia seeds
- ½ tsp vanilla extract
