Simple Chicken Zoodle Soup (Paleo, Grain-Free)

My seasonal allergies have been killing me! It’s so bad this year because the weather is so back and forth, hot and cold with differences of 30° in a day. And once my allergies get bad, I get the sinus congestion and pain and headaches that comes with constant congestion. I am trying all natural remedies to help, I am rating raw local honey and using a Neti pot to help clear out my sinuses. Don’t get me wrong, those help up to a point, but I’m still struggling.

I try to avoid taking medicine if I can help it, because I am getting more and more aware of what I put in my body. Leading a healthy Paleo lifestyle, I constantly start to question the products I use from my hair products to lotion to moisturizer and even medicine. Whenever possible I try to use natural holistic products. I will give it a few more days before I break down and buy some decongestant.

Meanwhile, I am making some warm and comforting chicken zoodle soup. Whenever I am under the weather, I love a hot bowl of soup. You don’t need to be sick to enjoy a warm bowl of soup, this makes a great filling lunch or dinner anytime.

This soup is so easy to make and it’s also an easy way to get some more vegetables into your diet.

Ingredients:
1 ½ cup chicken or turkey broth, homemade preferred
½ cup water
1 large zucchini spiralized
4 carrots, cut into round
2 celery stalks, chopped
1 tsp salt
¼ tsp pepper

 

Add the broth to a soup pot. If the broth is homemade and gelatinous, add in ½ cup water. If the broth is store bought, add in 2 cups of broth instead. Cook over medium heat and bring to a boil.

Add the zucchini, carrots, celery, salt and pepper. Turn heat down to medium-low and cook for 30 minutes until the vegetables are the desired tenderness.

Cool for 5 minutes before serving.
