Lime Carne Asada – Made in the Instant Pot (Paleo, Whole30)

Cinco de Mayo is tomorrow! As is any of us need an excuse to have Mexican food, there it is. I adore Mexican food, and I will be stuffing my face with some tacos, and chips and guac tomorrow night. One of my friends is having a girl’s night at her place and I am super excited to catch up with friends I haven’t seen in a bit. It should be a great time!

Now I already have tons of recipes that would be perfect for tomorrow, like my Taco Stuffed Peppers, or my Taco Meatballs and my Horchata but I figured you can never have too many choices for yummy Mexican food. This recipe is super easy and always comes out tender, no matter what cuts of meat you use because the Instant Pot is basically magic. It makes meat just fall apart tenders and it’s probably my favorite kitchen appliance.

Not only is Cinco de Mayo on Friday, but then we have the Kentucky Derby on Saturday, so there will be plenty of things to do this weekend. Mexican food and margaritas on Friday and Mint Juleps and betting on horse races on Saturday, sounds like a great weekend to me. Let’s just hope the weather cooperates, and the sun makes a glorious appearance because everything’s better with some good weather.

Enjoy your weekend and have some yummy food, dessert and drinks!

Ingredients:
1 orange, juiced
1 lime, juiced
1 tbsp olive oil
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp turmeric
1 ½ lb beef stew meat, cut into bite sized pieces

4 limes, juiced (about a ½ cup lime juice)
½ cup broth, chicken or beef

In a large bowl add the orange juice, lime juice, olive oil, salt, garlic powder, onion powder, cumin and turmeric and mix to combine. Add in the beef and mix until all beef pieces are coated with the marinade.

Cover the bowl with plastic wrap and place in fridge to marinate for 8 hours or overnight.

Once ready to cook, add the lime juice and the broth to your Instant Pot and stir. Add the marinated beef pieces and close the lid.

Press the “Meat/Stew” button and add 10 more minutes to bring the time to 45 minutes.

Let the Instant Pot do its thing. Once it de-pressurizes, use 2 forks to shred the beef.

Serve over a salad or with your favorite type of tortillas or tortilla chips.
