Lemon Sweet Tea

The countdown to vacation has begun! In just a few short days we’ll be off to the Dominican Republic for 6 sun filled days and I am just so excited for it. This past weekend I did a lot to get ready, I got my hair did and of course I did a little shopping. The bf needed some shorts so I of course volunteered to go with him in hopes of picking up a few things for myself. We decided to go to Old Navy and they had some great deals. I ended up getting a beach hat, a swim suit coverup and some shorts. Gotta love shopping for vacation!

Even though I will be gone next week I will still be posting. I really enjoy working on my blog and it is definitely not something I need to take a vacation from. So be on the lookout for 3 tropical inspired recipes from me next week. And assuming my phone works follow me on Instagram where I will surely post the obligatory beach picture with my toes in the sand.

But enough about that, let’s live in the present and talk about this iced tea. I love sweet tea in the summer time. Is there anything more refreshing? Unfortunately, sweet tea can be overly sweet and is sweetened with refined sugar. My mother’s best friend is from Tennessee and she makes the best sweet tea I’ve ever had. Of course, she at one point shared her recipe with my mother and my mother shared it with me. It’s quite simple and you would never know the secret ingredient is baking soda. The baking soda helps to take away the bitterness of the tea, it just leaves you with a smooth tea taste. This is also sweetened with a little bit of honey, you can definitely add more to suit your taste preference, but I feel this is quite sweet enough for me.

Perfect on a hot summer day, make sure to serve over ice.

Ingredients:
8 cups water
4 bags Luzianne iced tea bags
¼ tsp baking soda
1 lemon, sliced

Simple Syrup:
1 cup water
2 tbsp honey

Add the 8 cups of water to a medium sized saucepan and bring to a boil. Add the 4 tea bags and remove from heat.

Let steep for 8 minutes.

While the tea is steeping, make the simple syrup. Add the 1 cup water to a small sauce pan and bring to a boil.

Once it is boiling, add the honey and stir until honey is melted. Remove from heat.

Add the tea to a pitcher, then add in the baking soda and lemon.

Add in the simple syrup and stir until well mixed.

Let cool then refrigerate for 3 to 4 hours until it is very cold.
