Iced Horchata Latte (Paleo, Nut-Free)
Woohoo it finally feels like spring! We’ve still got the April showers thing happening, but I’m not even complaining when it means that we get multiple days a week, that are in the 70s. I’ve started to remember just how glorious the sun feels when it hits your skin, and I never want to let go of that feeling.
Warm weather means that companies will be stepping up their fun iced drinks menu and Starbucks already started months ago. They even dropped their Unicorn Frappuccino yesterday, that is only available for a very limited time. I’ve seen a few people share it on Instagram, and while the drink itself is Instagrammable AF, it makes me cringe just thinking of how much food coloring, sugar and unnatural ingredients it contains. Don’t think I’ll be trying one.
But I think it was back in March when Starbucks unleashed their coconut and almond milk Macchiatos. If I remember correctly, they had a brilliant campaign for it. Buy one for yourself and get a free one for a friend. That is marketing gold right there!
The one that really caught my eye was their Cinnamon Almondmilk Macchiato because it’s inspired by Horchata and I love me a good cinnamon drink. I went for weeks of really wanting to try one, only to look at the ingredients and decide not to. It contains so many ingredients that I would rather not put into my body.
Then I noticed that one of my favorite small coffee places in the neighborhood was starting to sell Iced Horchata Lattes and I was intrigued. So I asked one of the employees how it’s made, and it’s all ingredients I’m comfortable with. I immediately tried one and fell in love. It was so delicious, the cinnamon and the coffee combination is a match made in heaven. I knew I wanted more of these, and that I had better figure out a way to make it at home.
I got to work, and came up with my Paleo friendly Horchata recipe, and after I had that the Iced Horchata Latte happened seamlessly. With such simple ingredients, and sweetened with a bit of coconut sugar, I don’t feel the least bit guilty when I indulge in this yummy latte!

6-8 ice cubes
1 cup Horchata
1 cup espresso
Add all ingredients to a glass and stir to combine.
Serve immediately and enjoy!
