Hamburger Soup (Whole30, Paleo)

Boy this has been a very trying week! It all started last week on Friday when my ear started to bother me a little. Well as annoying as it was, I was not going to let it bother me because I had plans to visit my uncle and his family in southern Illinois for the weekend. So I took a few pain meds and was on my way. By the time we left on Sunday afternoon it still hadn’t subsided and we got back home it was too late to go to an urgent care place, because they were all closed for the night.

I tried a few natural remedies, garlic cloves and olive oil in my ear and the garlic did help a little bit, but I was still in a LOT of pain. So much so that I actually wanted to cry, and I have a very high pain tolerance. The garlic did give me a little relief, so I had some passion flower tea to help me relax and went to bed.

The next morning I went to my doctor and my belief was confirmed, it was a full on ear infection. If you’ve never had an ear infection as an adult, for some reason they’re more common in children, let me tell you they are incredibly painful. So much that you can’t really concentrate on anything else. So I was a homebody for most of the week, watched movies and when I did get off the couch I made some yummy food. I am getting plenty of rest, and I seem to be on the mend, fingers crossed this will be a distant memory by next week.

Anytime I’m sick I always want carbs and comfort food, and always in that order. But with the chilly weather I figured warm soups would be best. So I made myself a ton of soups this week, and you know what, soups are pretty easy to make. The most time consuming part is cutting up the veggies, but then you just throw everything in a pot and let it cook.

This hamburger soup is so warm, hearty and comforting it’s a must for fall and the cooler nights ahead.

Ingredients:
1 tbsp olive oil
1 lb grass-fed ground beef
½ tbsp paprika
½ tbsp onion powder
½ tbsp garlic powder
¼ cup tomato paste
4 carrots, cut into rounds
1 small sweet potato, diced
2 cups beef broth
1 avocado, diced

In a medium soup pot heat the olive oil and add the ground beef. Cook the beef until it is browned, then drain of excess fat if preferred.

Once the beef is browned, add the paprika, onion powder and garlic powder and mix to combine.

Add the tomato paste, carrots, sweet potato and beef broth, and stir until combined.

Cover the pan and turn heat to low. Let simmer for an hour until vegetables are cooked through.

Once vegetables are fork tender, remove from heat and cool for 5 to 10 minutes.

Top with avocado and serve.
