Cinnamon Pumpkin Waffles(Paleo, Grain-free)

Good morning lovely people! It’s a sunny Tuesday morning and there is a definite chill in the air. Fall is officially upon us! I spent this past Sunday at a pumpkin patch, so you don’t get more fall than that.

Now that we’re way into October even the people who were the biggest summer hangers oners can start to get into pumpkin. This recipe is for everyone that wants to add a little pumpkin into their lives. Pumpkin is delicious and filled with fiber, potassium and is relatively low in calories and sugar. There’s a reason we all go crazy for pumpkin in the autumn.

But if you’re anything like my boyfriend, you may be over the whole pumpkin spice thing. He can handle it in small doses, but gets tired of everything from coffees to even popcorn (yuck) being pumpkin flavored. Yes pumpkin spice gets done to death sometimes.

Luckily these waffles don’t have any pumpkin spice, because I came up with the recipe with him in mind. Since there is no pumpkin spice, just a teeny bit of cinnamon, the sweet and delicate flavor of the pumpkin comes through. Believe you me, these pumpkin will become a breakfast staple for you, just like they have for me. I make them pretty much every Saturday morning now. Don’t judge, Judgey McJudgerson.

Ingredients:
1 cup almond flour
½ tapioca flour
2 tbsp maple sugar
1 tsp cinnamon
½ tsp baking soda
¼ tsp salt
⅓ cup cashew milk
2 eggs, whipped
1 tbsp maple syrup
¼ cup pumpkin puree

cinnamon, maple syrup and pecans for toppings

In a medium bowl add the almond flour, maple sugar, baking soda and salt and whisk until combined.

In a small bowl, ddd on the cashew milk, eggs, maple syrup and pumpkin puree and whisk until combined well.

Cook the waffles by following the manufacturer’s instructions for your waffle maker*. (Since there is no oil in the waffles, if your waffle maker is not nonstick, you may want to coat it with coconut oil before pouring the batter in.)

Dust with a little more cinnamon, and serve with maple syrup and pecans and enjoy!

*My waffle maker is small and relatively inexpensive, it’s a great investment since I now use it all the time.
