Chocolate Chip Blondie Muffins (Paleo, Grain-Free)

Last night we landed in Portland and Portland welcomed us in true Portland fashion, with some lovely rain. And not just light steady rain, misty rain that quickly turns into heavy rain. If you hate rain then the Pacific Northwest is not for you. I’m hoping for a clear day today so I can do some exploring and walk around a bit. Today will be all about spending time with friends we have here and going to some yummy restaurants.

I don’t have a plan for the day, but I do have some places I want to hit up. I definitely want to go back to the Cultured Caveman, that is the most delicious restaurant and it’s so easy to eat healthy cause everything is Paleo! Then I want to go to Eb and Bean and try their dairy-free frozen yogurt, cause I hear that is the best. And I think for dinner I want to go to Dick’s Kitchen. I did some major restaurnt research and they came up in all of my searches as having tons of Paleo options. They even have a Paleo parfait for dessert, so you know I am trying that. I can’t wait!

Tomorrow morning we are leaving Portland pretty early to head to the mountains. The drive should be so beautiful and scenic. And the best part, we rented a big Subaru Forester which has the biggest sunroof I have even seen. That will be amazing for the drive, to take in all the pretty views. I have to make sure my phone is charged cause I will be taking tons of pictures.

We rented an awesome home in Bend and I am excited to see if it’s as wonderful as the pictures make it out to be. My experience with AirBnb is quite good, every place I’ve stayed in actually ends up looking better than the pictures on the website. I’m hoping that is the case this time too.

But since we will be staying in a house with a bunch of our friends, we are going to go grocery shopping tonight to get some supplies. My plan while we are in Bend is to eat out only for dinner so that means I will need to make stuff for a quick breakfast and lunch. I’m thinking of making muffins for everyone one morning. Muffins are so easy and they portable, so you can just grab one and go.

In honor of this trip I decided to come up with a muffin recipe that even the biggest Paleo naysayer will love. These Chocolate Chip Blondie Muffins fit the bill. They are minimally sweetened so you can have them for breakfast, but they taste so rich and decadent that you can also have as dessert. Gotta love when that happens.

Ingredients:
1 cup almond butter
½ cup apple sauce
¼ cup coconut sugar
1 tsp baking soda
1 tsp vanilla extract
2 eggs, whipped
½ cup dark chocolate chips

Heat oven to 350° and line a muffin pan with 10 paper liners. I used parchment paper liners.

In a medium bowl, add the almond butter, apple sauce, coconut sugar, baking soda, vanilla extract and mix to combine. Add in the eggs and mix to combine well. Fold in the chocolate chips.

Evenly divide the dough between the 10 muffin cups.

Bake for 15 min until muffins are golden and domed.

Cool for 5 minutes before serving.
