Cherry Gummies (Paleo, Refined Sugar-Free)

Happy Valentine’s Day lovies! No matter how you’re planning on spending your day, I really hope a good dessert is involved. But if you really want to show yourself some love, try a Paleo friendly dessert. With none if that pesky refined sugar, your body will thank you for it.

If you think there is no possible way to make a dessert in time for tonight, well that’s just not true. If you have 15 minutes you can make these Cherry Gummies and then let them set for 2 hours while you do other stuff. To make them Valentine’s Day ready, be sure to use a heart shaped silicone mold.

I’m a big love bug this morning, because I just got engaged yesterday! I will be sharing my engagement story later this week, but it happened at the Oregon coast on our favorite beach. It was an amazing experience and now I get to spend all of Valentine’s Day as an engaged woman.

I wish I could say we have super romantic plans for today, but we are flying back from Portland later and will be arriving in Chicago late afternoon. With all the traveling we’ve done these past few days we are both exhausted and will just want to spend some time together at home. And I am perfectly fine with that.

However you spend your day today, I hope it’s a great one!

Ingredients:
¾ cup unsweetened cherry juice
2 tbsp maple syrup
3 tbsp grass-fed gelatin
¼ cup seltzer water

You will need a silicone tray for these. Place the silicone tray on a baking sheet to make it easier to handle.

In a small sauce pan, add the cherry juice and maple syrup and bring to a slow boil.

Once boiling, add the gelatin, 1 tablespoon at a time and whisk until it fully dissolves. This will take about 10 minutes.

When the gelatin is fully dissolved, remove from heat and add the seltzer water. Mix until combined and then pour into the silicone tray.

Place the tray in the fridge and allow to set for 2 hours.

Once set, pop the gummies out of the tray. Allow them to come up to room temperature before serving.

Enjoy!

*Store leftovers in an airtight container in the fridge.
