3 Ingredient Sweet Bread (Nut-free, Paleo)

I love plantains! Just last week I used a green plantain to make Paleo tortillas. Seriously! Nothing else added, only plantains! And they were amazing and a little bit crunchy! I always have plantains in my house and they are always in varying degrees of ripeness. I have green, to yellow to oh no are they rotten black. The black plantains do not get overly ripe like bananas do, instead they get very sweet and are mostly used in sweet dishes. That is the type of plantain you want to use for this sweet bread.

This sweet bread is perfect for breakfast or lunch topped with some fruit jam, almond butter or a little drizzle of honey. Or if you’re an adventurous foodie you can try pairing it with something a little more savory if you like the sweet and savory thing and like to live on the edge. I am not that exciting.

My bf loves this sweet bread plain and he could not believe there is no added sweetener. I had to tell him numerous times that there is no maple syrup, honey or coconut sugar, it is simply sweetness from the plantain. Needless to say he was sold on it! I am always a little apprehensive to have him try a dish when I try something a little out of the norm, but if he likes it, then you know it’s good.

Super easy to make, all you need is a little patience for the plantain to get ripe enough!

 
Ingredients:
1 plantain, very black
1 egg
1 tbsp coconut oil, melted

 

Heat oven to 350° and line a baking sheet with parchment paper.

Peel the plantain and cut into small pieces. Add to the food processor and process until it turns into a smooth batter.

Add in the egg and coconut oil and process until all ingredients are combined well.

Pour the batter on the baking sheet and use a spatula to spread it evenly.

Bake for 20 to 25 minutes until the bread is browned.

Cool for 5 minutes before serving.
